Just disable the Windows Update service in services.msc
I do that when I don't want anything to intervene in my work.

Like @azuredivay said, you "shouldn't" have that problem with active hours.

Otherwise, I recently came accross the Enterprise edition or LTSB (Long Term Servicing Branch) which allow you to defer that kind of updates even longer than the Pro version. You can give it a go.
(Plus, it comes free or Cortana, Edge, and other unecessary apps.)

PS: Please, clean your monitor
