I have a Macbook with 128GB PCIe SSD that's very pricey to upgrade. Considering switching to another UNIX distro but will that solve my storage problem or should I bite the bullet and just upgrade it? Or both?

    switch to a good Linux distro. I'm biased towards CentOS but Ubuntu is good too.

    I'm about sure that any other UNIX distro will use less disk space than MacOS. If you don't need Adobe stuffs or such softwares you might consider switching.

    buy a big micro sd card and a adapter that fits evenly into your macbook on ebay/amazon?

    You could always buy a Samsung T3. It's small and fast.

    There are tiny USB storage devices. Some a very fast. Move your home directory there and it'll be just about flawless.
